All Time Fav: Mexican Savoury Power Bowl

Quick Easy Savoury Power Bowl

This is my definite GO-2 when I don't have much time to meal prep for the week ahead. This Power Bowl is packed with lots of fiber and protein a MASSIVE 43 grams of protein that will keep you energised and also keep the hunger bugs at bay.

The lean mince and rice can be frozen if need be up to 4 weeks and the side salsa is quick and easy to make on the go or store in the fridge for up to 4 days. This doesn't last long in our house and is rarely frozen :-)

I like eating this for my lunches as the carbs are getting up there and I have the rest of the day to burn them.


Lean Beef or Chicken

Chili powder or Fresh

Mexican powder mix (try go for low salt & low sugar)

2 x cans re-fried beans

Tomatoes if you like chopped fine

Cook all above ingredients in non-stick pan (that's it, super easy)


Black Rice or quinoa or mix the two together

Salsa is very basic, red onion, tomatoes, avocado and lime juice fresh.

Nutritional Information:

Carbs 40 grams, Protein 43 grams!!!, Fat 17 grams, 488 calories.
